Indian Spinach Curry

This recipe is an Indian one I got from Simon’s dad, Morten. I loved it from the very first mouthful and have made it ever since.

I eat it with a good chutney, either mango or apple, and wild rice. In the recipe there is about 600 kcal and that is if you eat all of it (I didn’t count in the chicken)..

So, here it is, the recipe of Indian Spinach Curry:

2 big onions

12 cloves of garlic

3 cm ginger

1 fresh chilli

1 tbsp. milk

450 g spinach

4 chicken breasts

1.5 tsp. garam masala

1 can of diced tomatoes

1 cup cream

lemon juice

salt and pepper

How to do:

Chop the ginger, onion and garlic finely. Put it in a separate bowl.

Chop the chilli finely. Put it in a separate bowl.

Cut chicken into cubes.

Fry ginger, onion and garlic while adding the milk. When the onions are transparent, add the chicken and fry it until it is white.
When the chicken is fried, add chili, spinach, tomato and cream and season it with salt, pepper and lemon juice.
