Today I made a wonderful strawberry pie with marzipan, orange and elderflower. It was so delicious and summer-ish, that I almost shed a tear. You should try it some day!
Make a bottom of 100 g butter, 150 g marzipan, 3 dl flour (I used mixed wheat and coarser flour and also oatmeal), 1 tbs orange juice and put it in a pie shape (I don’t know what it is called in English) and bake the dough at 200 degrees for 10-12 minutes.
While baking, mix 3 egg yolks with 1 dl sugar until it is white and fluffy. Add the shell of an orange and 6 tbs of concentrated elderflower juice and put it in the baked pie. Lower the heat till 175 degrees and bake the elderflower/yolk mix in 10-15 minutes.
When cooled down, put strawberries on the top, either whole or in half, and enjoy! It is gooooood.
